  • 7 tablespoons softened butter
  • 5/8 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup self-rising flour
  • 2 tablespoons milk
  • 1 egg white until stiff
  • 7/8 cup powdered sugar
  • 1 1/8 cups mascarpone cheese
  • grated coconut

    Preheat the oven to 180 degrees Celsius.

    Line 12 muffin forms with paper cups.

    In a bowl, mix the butter with the sugar until creamy. Add the eggs, one at a time, alternating with a little bit of flour, and whisk well.

    Add the vanilla extract and the remaining flour, mixing well.

    Add the milk, and mix until the batter obtains a consistency that can be dropped into the muffin cups.

    Bake for 15 to 20 minutes, or until they are golden brown.

    Remove from oven, and let cool before decorating.
