- 7 tablespoons softened butter
- 5/8 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 cup self-rising flour
- 2 tablespoons milk
- 1 egg white until stiff
- 7/8 cup powdered sugar
- 1 1/8 cups mascarpone cheese
- grated coconut
- honey
- chocolate Grated, for garnish
Directions

1Preheat the oven to 180 degrees Celsius.

2Line 12 muffin forms with paper cups.

3In a bowl, mix the butter with the sugar until creamy. Add the eggs, one at a time, alternating with a little bit of flour, and whisk well.

4Add the vanilla extract and the remaining flour, mixing well.

5Add the milk, and mix until the batter obtains a consistency that can be dropped into the muffin cups.

6Bake for 15 to 20 minutes, or until they are golden brown.

7Remove from oven, and let cool before decorating.

8Whisk the egg white until stiff.

9Add the sugar and cheese, mix well, and spread on the cooled cupcakes.
