Vanilla Rice Pudding

  • 4 c. (2% low-fat or fat-free) milk
  • 1 egg, beaten
  • 1 pkg. Jell-O vanilla flavor pudding (not instant)
  • 1 c. Minute rice (uncooked)
  • 1/4 c. raisins
  • 1/4 c. nuts
  • 1/4 tsp. cinnamon
  • 1/8 tsp. nutmeg

Directions

    Stir milk and egg into pudding; mix in saucepan.

    Add rice, raisins and nuts.

    Stir over medium heat until comes to boil. Cool 5 minutes.

    Stir twice.

    Pour into dessert dishes or serving bowl.

    Sprinkle with cinnamon and nutmeg.

    Serve warm or refrigerate.

    Place plastic wrap on pudding while cooling.
