Vanilla Wafer Cake

  • 1 c. (2 sticks) butter (room temperature)
  • 2 c. sugar
  • 6 eggs
  • 12 oz. vanilla wafers, crushed
  • 1/2 c. milk
  • 1 (7 oz.) pkg. grated coconut
  • 1 c. chopped pecans
  • 1 c. heavy cream, whipped (optional)

Directions

    Cream the butter and sugar.

    Beat in eggs, one at a time.

    Add the vanilla wafers alternately with the milk. Fold in coconut and pecans.

    Pour into an ungreased tube pan. Bake at 325° for 1 hour and 15 minutes. Serve with dollops of whipped cream.

    Cake may be frozen.
