- 3 Tbsp. olive oil
- 3/4 lb. scallopini veal
- 1/2 lb. sliced mushrooms
- 3 Tbsp. shallots, chopped
- 1 Tbsp. tomato paste
- 1/2 c. Madeira sauce
- 1 pkg. Knorr Swiss Hunter sauce
- 1 Tbsp. tarragon
Directions

1Dredge veal in flour.

2Saute in olive oil.

3Brown on both sides.

4Add mushrooms and shallots until wilted.

5Add Madeira sauce, 1 1/2 cups water, tomato paste and sauce mix.

6Mix well. Simmer 10 minutes.

7Add tarragon.
