Ingredients
- 2 1/2 lb. veal steak
- 1/2 c. flour
- 1 tsp. salt
- 1/2 tsp. pepper
- 2 beaten eggs
- 3/4 c. dry bread crumbs
- 1/4 lb. butter (1 stick)
- 3 Tbsp. lemon juice
- 3 Tbsp. chopped parsley
Directions

1Cut veal steak into 6 pieces.

2Pound to make thinner.

3Dip veal into mixture of flour, salt and pepper.

4Dip each piece in beaten egg, then in bread crumbs.

5Melt half of butter in large frying pan.

6Add veal.

7Cook over low heat until brown (about 15 minutes).

8Remove veal from heat.

9Brown the rest of the butter in the frying pan.

10Add lemon juice and parsley and stir well.

11Pour over veal and serve.
