- 1 1/2 lb. veal cutlets
- 4 slices Mozzarella cheese
- 4 slices Prosciutto or ham
- dash of black pepper
- 1 tsp. salt
- 1/4 tsp. sage or 4 leaves sage
- 2 Tbsp. butter
- 2 Tbsp. olive oil
- 1/2 c. white wine
- 1/4 c. flour
Directions

1Pound veal thin.

2Cut into 8 pieces.

3Enclose 1 slice of cheese and 1 slice of ham, season with salt, pepper and sage, between 2 veal cutlets.

4Moisten with wine.

5Flour each veal sandwich.

6There should be 4. Brown in butter and oil; turn and brown other side. Keep warm.

7Add wine to skillet and scrape up brown pieces.

8Pour over cutlets.
