Veal Marsala

- 1 1/2 lb. best white veal
- 1 Tbsp. flour
- 2 Tbsp. butter
- 1/2 c. Madeira or Marsala wine
- 2 Tbsp. water or chicken stock
- salt and pepper to taste
Directions

1Cut veal into 1 1/2 ounce scallopines flattened very thin. Sprinkle lightly with flour, salt and pepper.

2Melt butter in large frying pan.

3When hot, put in the scallopines and brown well on both sides over a fast heat.

4When all are browned, add to the wine and cook one minute longer.

5Arrange scallopines on platter.

6Add stock or water to frying pan and with a spatula, loosen all particles stuck to the bottom and sides of the pan.

7Pour over the meat.
