Ingredients
- 2 Tbsp. olive oil
- 1/2 medium onion, diced
- 1 stalk celery, diced
- 1 carrot, peeled and shredded
- 1 lb. ground veal
- 3 Tbsp. parsley
- 1/2 c. bread crumbs
- 1/2 tsp. nutmeg
- 2 eggs
- 1 tsp. salt
- black pepper to taste
Directions

1Preheat oven to 400°.

2Heat oil in frying pan and add the onion.

3Saute for 3 minutes and add the celery and carrot.

4Saute for five minutes over medium-high heat.

5Mix the vegetables into the ground veal.

6Add the parsley, bread crumbs, nutmeg, eggs, salt and pepper.

7Mix well.

8Lightly oil a baking dish.

9Divide mixture into small individual loaves.
-
10Place in baking dish and bake for 15 to 20 minutes.
