- 4 veal cutlets (about 1/4-inch thick)
- 1/2 c. plain dry bread crumbs
- 2 1/4 tsp. grated Parmesan cheese
- 1 egg
- 1 Tbsp. water
- 1 Tbsp. olive oil
- 1 1/2 c. tomato sauce
- 1/2 c. shredded Mozzarella cheese
- 1/4 tsp. oregano, crushed
Directions

1Preheat oven to 375°.

2Pound veal cutlets to 1/8-inch thick on cutting board with meat mallet.

3In a shallow dish, combine bread crumbs and Parmesan cheese and mix well.

4In another shallow dish, beat egg and water. Dip veal into egg mixture, then coat with bread crumb mixture.

5In shallow nonstick skillet over medium-high heat, in hot oil, brown veal.

6In a shallow 2-quart baking dish, arrange cutlets and pour sauce over veal.

7Sprinkle Mozzarella cheese and oregano over veal. Bake 20 to 30 minutes or until bubbly.
