  • 1 1/2 to 2 lb. veal cutlets
  • 1/4 c. flour
  • 6 Tbsp. butter
  • 1/2 tsp. salt
  • 1/2 tsp. fresh pepper
  • 1/4 c. chopped parsley
  • juice of 1 1/2 lemons

Directions

    Dip veal in flour.

    Brown on both sides over high heat.

    Add salt and pepper and cook for 5 minutes.

    Shake skillet.

    Add lemon juice and parsley.

    Cook 1 minute.

    Stir well.

    Arrange on plates. Spoon sauce over veal.
