Ingredients
- 12 ounces spaghetti
- 1 1/2 cups corn Mexican or whole kernel corn, frozen
- 1 2/2 cups black beans canned, rinsed and drained
- 1 tablespoon olive oil
- 1 x cayenne pepper
- 1 x sea salt
- 1 1/2 cups salsa plus more for garnish if desired or make your own as i did for this recipe!
- 1/2 cup scallions, spring or green onions for garnish, chopped
Directions

1In a large pot, bring salted water to boil and add few drops of olive oil and spaghetti.

2Toss slightly and remove from heat!!

3The water will cook the pasta and leaving the starch in tact..for easy digestion.

4The water should be clear!

5You might need to toss once before draining pasta water!

6Note: the hot water can overcook the pasta!!

7..so check often!

9Meanwhile, in a heated large pan, add black beans and corn.

10Season with salt and pepper as needed.

11When spaghetti is finished cooking.

12Drain spaghetti Reserving a cup of pasta water.

13Add to beans and corn.

14Add salsa, tossing to coat.

15Add pasta water if needed.

16Divide pasta onto 4 serving plates.

17Garnish with additional salsa and green onions.

18Serve and enjoy!
