Vegetable and Apple Curry

  • 1 large yukon gold potato, cut in cubes
  • 1 large onion, cut in wedges
  • 2 garlic cloves, minced
  • 1 tablespoon chili pepper, seeds removed and minced
  • 3 sweet-tart apples, cored and chopped
  • 2 tablespoons vegetable oil
  • 34 cup golden raisin
  • 2 cups frozen peas
  • 2 tablespoons curry powder
  • salt and pepper
  • 1 (14 ounce) can coconut milk
  • 2 teaspoons cornstarch (dissolved in 1 tablespoon water) (optional)

Directions

    In large saucepan, boil potatoes until just tender, about 20 minutes.

    In frying pan, saute onion, garlic, chile pepper and apples in oil over medium until onion is translucent; stir frequently.

    Drain potatoes and add to frying pan, along with raisins and peas.

    Add curry powder and salt and pepper to taste.

    Mix to combine.

    Stir in coconut milk.

    Cook 15-20 minutes.

    The cornstarch may be added to thicken sauce if desired.
