  • 2 pkg. cream cheese, softened (8 oz. pkg.)
  • 1/2 c. grated carrots, well drained
  • 2 Tbsp. grated onion
  • 1/2 c. grated bell pepper, well drained
  • 1 can crushed pineapple (large), well drained
  • 1 tsp. seasoned salt

Directions

    After I let pineapple drain well in a colander, I take it in my hands and squeeze it to get all the juice out that I can.

    Mix all ingredients well; make into a ball.

    Roll in chopped pecans or chopped fresh parsley.
  4. 4
    Store in refrigerator until ready to serve.

    Allow to soften for about 15 minutes before serving.

    Very good with Wheat Thins or other snack crackers.
