- 2 pkg. cream cheese, softened (8 oz. pkg.)
- 1/2 c. grated carrots, well drained
- 2 Tbsp. grated onion
- 1/2 c. grated bell pepper, well drained
- 1 can crushed pineapple (large), well drained
- 1 tsp. seasoned salt
Directions

1After I let pineapple drain well in a colander, I take it in my hands and squeeze it to get all the juice out that I can.

2Mix all ingredients well; make into a ball.

3Roll in chopped pecans or chopped fresh parsley.

4Store in refrigerator until ready to serve.

5Allow to soften for about 15 minutes before serving.

6Very good with Wheat Thins or other snack crackers.
