Vegetable Bean Soup

Ingredients

  • 1/4 c. corn oil
  • 2 cloves garlic, minced
  • 3 ribs celery, chopped
  • 2 lb. ham hocks or ham bone
  • 1 bay leaf
  • 2 whole, peeled potatoes
  • 1/3 c. chopped parsley
  • 2 onions, chopped
  • 4 carrots, chopped
  • 3 qt. water
  • 1 lb. navy or pea beans, soaked and drained
  • 2 tomatoes, peeled and chopped
  • salt and pepper

    Heat oil in large kettle.

    Cook onions and garlic over medium heat until onions are soft.

    Add carrots.

    Continue cooking and stirring.

    Add water, ham bone, beans, bay leaf and potatoes. Bring mixture to a boil; reduce heat and simmer, covered, about two hours, or until beans are tender.
