Ingredients
- 1/4 c. corn oil
- 2 cloves garlic, minced
- 3 ribs celery, chopped
- 2 lb. ham hocks or ham bone
- 1 bay leaf
- 2 whole, peeled potatoes
- 1/3 c. chopped parsley
- 2 onions, chopped
- 4 carrots, chopped
- 3 qt. water
- 1 lb. navy or pea beans, soaked and drained
- 2 tomatoes, peeled and chopped
- salt and pepper
Directions

1Heat oil in large kettle.

2Cook onions and garlic over medium heat until onions are soft.

3Add carrots.

4Continue cooking and stirring.

5Add water, ham bone, beans, bay leaf and potatoes. Bring mixture to a boil; reduce heat and simmer, covered, about two hours, or until beans are tender.
