Vegetable Beef Soup

Ingredients

  • 1 soup bone
  • 1 to 1 1/2 lb. soup meat
  • 1 (1 pt. 2 oz.) canned tomato juice
  • 1/2 c. chopped onion
  • 3 tsp. salt
  • 2 tsp. Worcestershire sauce
  • 1/4 tsp. chili powder
  • 2 bay leaves
  • 1 lb. (2 c.) tomatoes
  • 1 c. diced celery
  • 1 (8 3/4 oz.) can corn
  • 1 c. sliced carrots
  • 1 c. diced potatoes
  • 1 (10 oz.) pkg. frozen limas (anything else you like)

Directions

    Combine meat, tomato juice, onion, seasonings and 6 cups water in soup kettle.

    Cover and simmer 2 hours.

    Trim meat and cut in cubes.

    Strain broth and skim off excess fat.

    Return meat and add vegetables.

    Cover and simmer 1 hour.
