Vegetable Beef Stew

- 1 1/2 lb. lean beef, cubed and remove any visible fat
- 1 c. chopped celery
- 1 c. chopped onion
- 2 large potatoes, chopped
- 1 c. turnip, chopped
- 1 c. carrots, sliced
- 1 c. frozen peas
- 1 envelope Durkee beef stew seasoning mix
Directions

1In heavy pan, stir beef in 1 tablespoon oil until no longer pink.

2Add vegetables except for peas.

3Add water to cover; bring to a boil and turn heat down.

4Simmer 2 hours, then add Durkee beef stew seasoning mix which has been thoroughly dissolved in 1 cup warm water.

5Stir into the vegetable mixture and cook 1 hour (simmer).

6Add the peas; cook an additional 10 minutes.
