- 1 Tbsp. vegetable oil
- 1 c. chopped onion
- 2 garlic buds
- 1 green pepper, chopped
- 2 c. diced tomatoes
- 4 c. zucchini or squash, diced
- 2 c. frozen whole corn
- 1 tsp. chili powder
- salt and pepper to taste
- 1 c. grated cheese (Jack or Cheddar)
Directions

1Heat oil; saute onion and garlic for 5 minutes.

2Add vegetables and chili powder; cook 10 to 15 minutes or until tender.

3Season to taste.

4Pour in greased dish; heat until hot and sprinkle with cheese.

5Heat 5 minutes.

6Serves 10 to 12.
