Vegetable Casserole

Ingredients

  • 1 lb. carrots, sliced
  • 1 head broccoli (angular cuts)
  • 1 head cauliflower (angular cuts)
  • 1 can cream of celery soup
  • 2 to 3 Tbsp. mayonnaise
  • 1 lb. Cheddar cheese, shredded
  • 1/4 c. diced celery (optional)
  • 2 Tbsp. diced fresh onion (optional)
  • salt and pepper to taste

Directions

    Toss carrots, broccoli and cauliflower.

    Mix together celery soup, mayonnaise, Cheddar cheese, diced celery, fresh onion, salt and pepper.

    Mix all together.

    Spread out into a 9 x 13-inch pan. Top with 2 tablespoons melted butter mixed with 1/2 cup seasoned bread crumbs.

    Sprinkle Parmesan cheese over this.

    Bake at 350° for 30 to 35 minutes or until vegetables are just tender.
