Vegetable Casserole

  • 2 (8 or 9 oz. each) pkg. frozen mixed vegetables (without potatoes)
  • 1 onion, chopped
  • 1/2 to 1 c. celery, chopped
  • 1 c. sharp Cheddar cheese
  • 1 c. mayonnaise
  • 2 c. Ritz cracker crumbs
  • 1 stick margarine

Directions

    Cook mixed vegetables, onion and celery in water until tender, then drain.

    Mix together mayonnaise and 1/2 cup cheese. Combine with vegetables and pour into greased casserole.

    Mix together cracker crumbs, margarine and 1/2 cup cheese. Sprinkle on top of casserole.

    Bake 30 minutes at 350°.
