- 4 medium carrots
- 2 medium zucchini
- 1/4 c. mayonnaise
- 2 Tbsp. flour
- dash of pepper
- 1/4 tsp. Italian seasoning
- 1/2 c. bread crumbs
- 1/4 c. grated Parmesan cheese
- 1 Tbsp. melted margarine
- 3/4 tsp. salt
- 1 Tbsp. parsley, chopped
Directions

1Cut carrots and zucchini julienne style and then cook them until they are tender.

2In a saucepan add the first eight ingredients and cook over medium heat until smooth and thick.

3Do not boil.

4Then mix vegetables and sauce in a casserole dish. Stir bread crumbs, cheese and margarine together and spread over the top.

5Bake for 15 minutes at 350° to warm and brown crumbs.
