  • 3 c. assorted vegetables (such as broccoli, carrots, green beans, corn or green peppers)
  • 1 medium onion, chopped
  • 1 c. grated Cheddar cheese
  • 3/4 c. mayonnaise
  • Ritz crackers, crushed
  • 1 can sliced water chestnuts (optional)

Directions

    Cook and drain vegetables.

    Stir in remaining ingredients, except crackers. Top with buttered crushed Ritz crackers.

    Bake at 350° until bubbly.
