- 1 green pepper, chopped
- 1 onion, chopped
- 1 Tbsp. olive oil
- 1 (28 oz.) can tomatoes
- 1 (8 oz.) jar picante sauce (mild)
- 1 tsp. cumin
- 1 1/2 tsp. chili powder
- 2 small zucchini, chopped
- 1 can kidney beans, rinsed and drained
- 1 c. corn
Directions

1In olive oil, saute green pepper and onion.

2Add tomatoes (chopped or blended).

3Add picante sauce, cumin and chili powder. Add corn, zucchini and kidney beans.

4Cook over low heat 30 minutes.

5Serve as is or with rice.
