  • 1 green pepper, chopped
  • 1 onion, chopped
  • 1 Tbsp. olive oil
  • 1 (28 oz.) can tomatoes
  • 1 (8 oz.) jar picante sauce (mild)
  • 1 tsp. cumin
  • 1 1/2 tsp. chili powder
  • 2 small zucchini, chopped
  • 1 can kidney beans, rinsed and drained
  • 1 c. corn

Directions

    In olive oil, saute green pepper and onion.

    Add tomatoes (chopped or blended).

    Add picante sauce, cumin and chili powder. Add corn, zucchini and kidney beans.

    Cook over low heat 30 minutes.

    Serve as is or with rice.
