- 1 Tbsp. plus 1 tsp. vegetable oil
- 2 c. diced zucchini
- 1 c. mushrooms, cut into quarters
- 1 c. green beans, 2-inch pieces
- 1 c. carrots, sliced
- 1 c. diced onions
- 1/2 c. diced celery
- 1 medium bell pepper, diced
- 2 c. chicken broth
- 1/2 tsp. ground thyme
- 1 c. skim milk
- 1 Tbsp. chopped parsley
- 1 c. tomato sauce
Directions

1Heat oil in a large pot.

2Add next 8 ingredients and saute, stirring occasionally for 10 minutes.

3Add remaining ingredients except milk and parsley.

4Simmer 30 to 40 minutes, stirring occasionally.

5Stir in milk.

6Heat but do not boil.

7Garnish with parsley.
