Ingredients
- 2 Tbsp. butter or margarine
- 1 c. diced onion
- 2 c. diced potato
- 6 c. water
- 4 vegetable bouillon cubes
- 1 tsp. salt
- 1 c. diced celery
- 1 c. diced carrot
- 1/2 c. diced green pepper
- 1/2 c. diced white turnip
- 1/2 c. diced parsnip
- 1 large tomato, skinned and diced
- 1/4 c. chopped parsley
Directions

1Saute onion in butter until tender.

2Add potato, water, bouillon cubes and salt.

3Simmer, covered, for 10 minutes.

4Add celery, carrot, pepper, turnip, parsnip and tomato.

5Simmer, covered, 20 minutes or until vegetables are tender.

6Just before serving, stir in the parsley.

7Makes 6 servings.
