  • garden fresh combo
  • 4 Tbsp. margarine, butter or oil
  • 4 c. sliced zucchini or summer squash
  • 1 (8 oz.) pkg. sliced, fresh mushrooms
  • 1 medium onion, sliced
  • 1 celery stalk, sliced
  • 1/2 tsp. salt
  • 1/2 tsp. thyme leaves
  • 2 medium tomatoes, quartered
  • 1/4 c. grated Parmesan cheese

Directions

    In a large skillet, combine all ingredients except the tomatoes and cheese. Cover loosely and cook about 10 minutes or until tender, stirring occasionally.

    Add tomatoes and cheese; cook 1 to 2 minutes or until heated through.
