- 4 Tbsp. margarine, butter or oil
- 4 c. sliced zucchini or summer squash
- 1 (8 oz.) pkg. sliced, fresh mushrooms
- 1 medium onion, sliced
- 1 celery stalk, sliced
- 1/2 tsp. salt
- 1/2 tsp. thyme leaves
- 2 medium tomatoes, quartered
- 1/4 c. grated Parmesan cheese
Directions

1In a large skillet, combine all ingredients except the tomatoes and cheese. Cover loosely and cook about 10 minutes or until tender, stirring occasionally.

2Add tomatoes and cheese; cook 1 to 2 minutes or until heated through.
