  • 4 -5 medium eggs, well beaten
  • 14 cup onion, diced
  • 14 cup bell pepper
  • 1 medium potato, raw diced
  • 1 large carrot, peeled and diced
  • 1 cup tasty cheese
  • 1 teaspoon butter

Directions

    Spray the bottom of a fry pan with non stick cooking spray.

    Sautee veges over a medium heat.

    Pour the beaten eggs over the sauteed vegetables.

    Sprinkle the cheese on top.

    Cover and cook on a low-med heat until cheese is melted and egg is cooked.

    Remove from heat.

    Let it cool slightly before slicing and serving.
