  • 2 small, thick sliced zucchini
  • 2 small, thick sliced squash
  • 2 medium quartered red onions
  • 1/4 c. vegetable oil
  • 1/2 tsp. oregano
  • salt and pepper
  • 3/4 c. corn meal
  • 1 c. unbleached flour
  • 1/4 c. sugar
  • 2 tsp. baking powder
  • 3/4 tsp. salt (optional)
  • 1 c. milk
  • 1 egg, beaten well
  • 2 Tbsp. oil

    Mix and sift dry ingredients.

    Add milk, egg and oil.

    Bake in shallow, greased pan at 425° for 20 minutes or until center is dry and top is golden brown.
