- 2 small, thick sliced squash
- 2 medium quartered red onions
- 1/4 c. vegetable oil
- 1/2 tsp. oregano
- salt and pepper
- 3/4 c. corn meal
- 1 c. unbleached flour
- 1/4 c. sugar
- 2 tsp. baking powder
- 3/4 tsp. salt (optional)
- 1 c. milk
- 1 egg, beaten well
- 2 Tbsp. oil
Directions

1Mix and sift dry ingredients.

2Add milk, egg and oil.

3Bake in shallow, greased pan at 425° for 20 minutes or until center is dry and top is golden brown.
