Ingredients
- 1/2 c. margarine
- 1 onion
- 1 clove garlic
- 1/2 c. plain flour
- 3 c. milk
- 3/4 tsp. pepper
- 1/2 tsp. salt
- 16 oz. uncooked lasagna
- 16 oz. cottage cheese
- 1 egg
- 4 oz. Mozzarella cheese
- 1/2 c. Parmesan cheese
- 2 carrots, shredded
- 2 zucchini, shredded
- 10 oz. frozen chopped broccoli
- 1/2 lb. spinach, chopped
Directions

1Microwave margarine; add onion and garlic.

2Microwave 3 minutes until onion is soft.

3Stir in flour.

4Cook 1 minute more. Gradually stir in milk 1/4 teaspoon pepper and salt.

5Microwave 10 minutes until sauce is thickened and smooth.

6Combine cheese, egg and 1/2 Mozzarella cheese, Parmesan cheese and 1/2 teaspoon pepper.

7Stir in carrots, zucchini, broccoli and spinach.

8Layer pan, 1/4 onion sauce, 1/3 noodles, 1/2 vegetable mixture.

9Repeat. Top with onion sauce and cheese.

10Bake at 375° for 45 to 50 minutes if browning too fast; cover with foil.
