  • 8 oz. lasagna noodles (12 noodles, 4 layers)
  • 16 oz. low-fat cottage cheese
  • 4 oz. shredded Mozzarella (approximately 1 c.)
  • 3 Tbsp. grated Parmesan
  • 1 Tbsp. parsley
  • 2 eggs
  • broccoli, cut and steamed
  • spinach, cut and steamed (or carrots)

Directions

    Cook and drain lasagna noodles.

    In a bowl, combine cottage cheese, Mozzarella, Parmesan cheese, parsley, eggs and vegetables. In a 9 x 13-inch pan, spread spaghetti sauce on bottom.
