- 4 uncooked manicotti shells
- 1/2 c. zucchini
- 1/2 c. broccoli
- 1 (2.5 oz.) jar mushrooms, drained
- 1/4 c. Parmesan cheese
- 2 Tbsp. chopped green pepper
- 1/2 c. spaghetti sauce
- 1 1/2 oz. (1/3 c.) shredded Mozzarella cheese
Directions

1Microwave shells to desired doneness.

2In small bowl combine zucchini, broccoli, mushrooms, Parmesan cheese and green pepper. Mix well and fill each shell with 1/2 cup of mixture.

3Place in 2-quart casserole dish.

4Pour spaghetti sauce over shells.

5Cover with wax paper and microwave on High 4 to 5 minutes, turning dish 1/4 turn halfway through cooking.

6Sprinkle with cheese and microwave uncovered on High 1 to 2 minutes until cheese is melted. Makes 2 servings.
