- 1/2 c. (1 stick) butter or margarine
- 2 c. (1/2 lb.) sliced zucchini
- 1 c. chopped green pepper
- 1 c. coarse bread crumbs
- 3 medium tomatoes, sliced
- 1/2 tsp. salt
- 2 c. cubed eggplant
- 1 c. chopped celery
- 3/4 c. thinly sliced onion
Directions

1In skillet, melt butter.

2Add zucchini, green pepper and celery.

3Stir in eggplant and salt.

4Remove vegetables (leaving butter in skillet) and put into casserole dish.

5Add crumbs to butter.

6Top vegetables with tomatoes and bread crumbs.

7Bake at 350° for 30 minutes.
