- 1 red onion
- 1 bell pepper, seeded
- 2 medium zucchini
- 2 cloves garlic, chopped
- 1 c. frozen corn, thawed
- 2 c. mushrooms, rinsed and sliced
- 2 tsp. olive oil
- 1 tsp. dried rosemary
- 1 tsp. dried tarragon
- 1/2 tsp. salt
Directions

1Preheat oven to 450°.

2Cut the onion, bell pepper and zucchini into chunks; place in a large bowl.

3Add the garlic, corn and mushrooms.

4Coat vegetables with olive oil.

5Stir in the herbs and salt.

6Mix well.

7Place vegetables in a large baking dish and bake until tender, about 20 minutes.
