  • 1 eggplant, sliced
  • 2 zucchini, sliced
  • 1 large onion
  • 2 tomatoes, sliced
  • 1/4 lb. butter
  • 1 egg
  • 1/4 c. Parmesan cheese
  • 8 oz. Mozzarella cheese, cut in slices

Directions

    In large frying pan, saute eggplant, zucchini, onion and tomatoes in butter for about 12 minutes or until soft.

    Add egg and Parmesan cheese; mix well.

    Put cooked ingredients into a baking dish (10-inch square) and cover with Mozzarella cheese. Bake in 350° oven for 1 hour or until browned and bubbling.

    Let set about 10 minutes before serving.
