- 1 eggplant, sliced
- 2 zucchini, sliced
- 1 large onion
- 2 tomatoes, sliced
- 1/4 lb. butter
- 1 egg
- 1/4 c. Parmesan cheese
- 8 oz. Mozzarella cheese, cut in slices
Directions

1In large frying pan, saute eggplant, zucchini, onion and tomatoes in butter for about 12 minutes or until soft.

2Add egg and Parmesan cheese; mix well.

3Put cooked ingredients into a baking dish (10-inch square) and cover with Mozzarella cheese. Bake in 350° oven for 1 hour or until browned and bubbling.

4Let set about 10 minutes before serving.
