  • 1 lb. fresh mushrooms, sliced
  • 1 onion, sliced
  • 1 zucchini or yellow squash, sliced
  • 1 green pepper, sliced
  • 3 or 4 Tbsp. butter
  • 1 tsp. salt
  • 1/4 tsp. black pepper
  • dash of garlic salt
  • 1 (10-inch) pie shell, baked for 20 minutes at 325~
  • 1 tomato, sliced
  • 1 c. mayonnaise
  • 1 c. Mozzarella cheese, grated

    Saute vegetables in butter until crisp, but not soft.

    Drain well and add seasonings.

    Place tomato slices in bottom of shell. Add veggies; spread mayonnaise and cheese over the top and bake, uncovered, at 325° for 45 to 60 minutes.
