- 1/2 c. grated Parmesan cheese
- 2 medium onions, sliced
- 1 green pepper, seeded and sliced
- 3 zucchini, sliced thin (skin on)
- 1 medium sized eggplant, sliced and peeled
- 2 tomatoes, sliced
- 1 tsp. salt
- 1/4 tsp. pepper
- 2 Tbsp. butter
Directions

1Line a 10 or 11-inch pie plate with pie crust.

2Sprinkle Parmesan cheese over crust.

3Saute onion, pepper and zucchini in 3 tablespoons oil until tender.

4Brown eggplant, sliced into skillet.

5Drain vegetables.

6Arrange vegetables, including tomatoes and cooked vegetables in pie shell.

7Sprinkle salt and pepper.

8Dot with butter and cheese.

9Bake at 350° for 45 minutes.
