Ingredients

  • 1/2 c. grated Parmesan cheese
  • 2 medium onions, sliced
  • 1 green pepper, seeded and sliced
  • 3 zucchini, sliced thin (skin on)
  • 1 medium sized eggplant, sliced and peeled
  • 2 tomatoes, sliced
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 2 Tbsp. butter

Directions

    Line a 10 or 11-inch pie plate with pie crust.

    Sprinkle Parmesan cheese over crust.

    Saute onion, pepper and zucchini in 3 tablespoons oil until tender.

    Brown eggplant, sliced into skillet.

    Drain vegetables.

    Arrange vegetables, including tomatoes and cooked vegetables in pie shell.

    Sprinkle salt and pepper.

    Dot with butter and cheese.

    Bake at 350° for 45 minutes.
