- 1 1/2 c. chopped zucchini
- 2 c. sliced mushrooms
- 1/2 c. chopped onion
- 2 Tbsp. butter
- 4 eggs
- 1 c. cottage cheese
- 1 1/2 c. Monterey Jack cheese
- 3 Tbsp. flour
- 1/4 tsp. baking powder
- 1/4 tsp. basil leaves, crushed
Directions

1Heat oven to 350°.

2Cook and stir zucchini, mushrooms and onions in butter over medium heat until tender.

3Place remaining ingredients in blender.

4Blend until smooth.

5Stir into vegetable mixture.

6Pour into greased 9-inch quiche dish or pie pan.

7Bake 30 minutes.

8Let stand 10 minutes before serving.

9Cut wedges; serve warm.
