- butter or, up to 4-tbs
- 4 teaspoons olive oil may be tripled
- 1 carrot chopped
- cauliflower
- florets
- broccoli
- florets
- yellow pepper cup chopped red green and
- 4 ounces vacherin Fribourgeois cheese
Directions

1Blanch the carrot, cauliflower, broccoli and peppers.

2Season the potatoes with salt.

3Heat the butter in a frying pan and add the potatoes.

4Fry gently on one side, then turn over and add cooked vegetables onto potatoes, sprinkle cheese over the vegetables.

5Cover pan and fry for a few minutes until the cheese has melted over the vegetables.
