- 1 c. chopped celery
- 1 c. chopped onion
- 1 c. chopped bell pepper
- Minute rice
- 1 c. boiling water
- 1/4 c. vegetable oil
- 1/3 c. mayonnaise
- salt and pepper
- 1 tomato, diced
Directions

1Cook rice in boiling water, covered, for 10 minutes.
