  • 1 can Mexi-corn, drained well
  • 1 c. chopped celery
  • 1 c. chopped onion
  • 1 c. chopped bell pepper
  • Minute rice
  • 1 c. boiling water
  • 1/4 c. vegetable oil
  • 1/3 c. mayonnaise
  • salt and pepper
  • 1 tomato, diced

Directions

    Cook rice in boiling water, covered, for 10 minutes.
