Ingredients
- 1/4 lb. broccoli (fresh or frozen)
- 1/4 lb. cauliflower (fresh or frozen)
- 1/2 c. rice
- 2 stalks celery, chopped
- 2 carrots, peeled and chopped
- 2 potatoes, peeled and chopped
- 1 medium onion, chopped
- 1 gal. water
- 2 Tbsp. margarine
- 1 carrot, peeled and grated
Directions

1Bring water to a boil.

2Add rice and potatoes.

3Cook 10 to 12 minutes.

4Reduce heat.

5Add remaining vegetables (except grated carrots) and cook 5 to 10 minutes.

6In a heavy pot over medium-high heat, melt margarine.

7Add 2 tablespoons water and carrots.

8Saute 4 to 5 minutes.

9Add to soup.

10Put 1 teaspoon sour cream in soup when served.
