- 2 Tbsp. vegetable oil
- 2 Tbsp. butter
- 1 c. chopped leeks
- 1/2 c. chopped onions
- 2 cloves garlic, minced
- 1 c. sliced carrots
- 1 c. chopped potatoes
- 1 c. peas
- 1 c. chopped green beans
- 1 c. chopped turnips
- 1 c. chopped celery
- 1/2 c. parsley
- 2 (8 oz.) cans tomato sauce
- salt and pepper
Directions

1Saute leeks, onions and garlic in oil and butter.

2Add remaining ingredients and 6 cups of water.

3Simmer for 2 hours, covered.
