  • 1 lb. soup meat or soup bone
  • 4 c. water
  • 2 tsp. salt
  • 1/4 c. washed rice or barley
  • 2 c. tomatoes
  • 1/4 c. sliced potatoes
  • 1/4 c. diced carrots
  • 1/4 c. chopped green beans
  • 1/4 c. diced celery
  • 1 Tbsp. minced parsley

Directions

    Place meat in 5-quart pressure cooker.

    Add remaining ingredients except parsley.

    Close cover securely.

    Place pressure regulator on vent pipe.

    Cook 20 minutes with pressure regulator rocking slowly.

    Let the pressure drop off of own accord.

    Add parsley to soup just before serving.

    Yields 4 to 6 servings.
