  • 2 slices bread, cubed
  • 1/2 c. julienne carrots strips
  • 1/2 c. sliced zucchini
  • 1/4 c. chopped onion
  • 1 clove garlic, minced
  • 2 tsp. polyunsaturated margarine
  • 8 oz. carton egg substitutes
  • 1/2 tsp. dried basil leaves
  • 1/4 c. shredded part skim Mozzarella cheese

Directions

    Place bread cubes in bottom of a greased 8 x 8 x 2-inch baking pan.

    Set aside; in nonstick skillet, saute carrots, onions, zucchini and garlic in margarine until tender.

    Stir in tomato. Cook 1 to 2 minutes more; spoon over bread cubes.

    Blend egg substitute, milk and basil; pour over vegetables in pan.

    Bake at 375° for 40 to 45 minutes or until knife inserted in center comes out clean.

    Sprinkle with cheese during last 5 minutes of baking. Makes 6 servings. 85 calories; 149 mg. sodium; 2 grams fat per serving.
