Vegetable Stuffed Shells

  • 2 tsp. margarine
  • 1/2 c. chopped onion
  • 1/2 c. shredded carrots
  • 1 pkg. chopped spinach, cooked
  • 1/4 tsp. basil
  • 8 jumbo shells, cooked and drained
  • 1 jar spaghetti sauce
  • 4 to 8 oz. Monterey Jack cheese
  • 1 c. Ricotta cheese

Directions

    Preheat oven to 350°.

    Spray 8-inch baking pan with nonstick cooking spray.

    In large skillet, melt butter (margarine); add onion.

    Cook over medium for 5 minutes.

    Add carrots, spinach and basil.

    Cook another 3 minutes.

    Remove from heat and add 1 cup Ricotta cheese.

    Stuff into shells.

    Put in baking dish.

    Cover with sauce and cheese.

    Bake 15 minutes or until heated through.
