Ingredients
- 2 tsp. margarine
- 1/2 c. chopped onion
- 1/2 c. shredded carrots
- 1 pkg. chopped spinach, cooked
- 1/4 tsp. basil
- 8 jumbo shells, cooked and drained
- 1 jar spaghetti sauce
- 4 to 8 oz. Monterey Jack cheese
- 1 c. Ricotta cheese
Directions

1Preheat oven to 350°.

2Spray 8-inch baking pan with nonstick cooking spray.

3In large skillet, melt butter (margarine); add onion.

4Cook over medium for 5 minutes.

5Add carrots, spinach and basil.

6Cook another 3 minutes.

7Remove from heat and add 1 cup Ricotta cheese.

8Stuff into shells.

9Put in baking dish.

10Cover with sauce and cheese.

11Bake 15 minutes or until heated through.
