  • 1 (10 oz.) pkg. frozen spinach
  • 1 lb. zucchini
  • 1/2 c. bread crumbs
  • 2 eggs, beaten
  • 1/2 c. Parmesan cheese
  • 2 Tbsp. chopped parsley
  • salt, pepper and garlic powder to taste

Directions

    Cook spinach and sliced zucchini in small amount of oil. Transfer to a mixing bowl and mash. Stir in all of the other ingredients. Season to taste. Spread in an 8 x 8 or 9 x 9-inch baking dish. Sprinkle top with some additional Parmesan cheese. Bake for 30 to 35 minutes in a 350° oven.
