    Preheat oven to 350 degrees.

    In a large saucepan, cook carrots, white potatoes and sweet potatoes in boiling water until the vegetables are barely tender, about 10 minutes.

    In a large bowl, mix apricots, honey, cinnamon, nutmeg, brown sugar, orange juice, lemon peel, and 1 cup of water.

    Add vegetables and toss.

    Pour mixture into a shallow 3 quart baking dish.
