  • 1 Tbsp. oil
  • 1 small onion, finely chopped (about 1/2 c.)
  • 1/2 c. finely chopped green bell pepper
  • 1 medium size rib celery, finely chopped (about 1/2 c.)
  • 3 small scallions, chopped (about 3 Tbsp.)
  • 4 cloves garlic, crushed
  • 3 Tbsp. tomato paste
  • 3 (15 oz.) cans black beans, rinsed and drained
  • 1 (13 oz.) can chicken broth
  • 1 bay leaf
  • 1/2 tsp. dried oregano
  • 1/2 tsp. dried marjoram
  • 1/2 tsp. dried thyme
  • 1/2 tsp. dried basil leaves
  • 1/2 tsp. ground cumin
  • 1/2 tsp. paprika
  • 1/2 tsp. salt
  • 1/2 tsp. ground red pepper
  • 1/2 tsp. ground black pepper

Directions

    In 3-quart saucepan over medium heat, heat oil; add onoin, green pepper, celery, scallions and garlic.

    Cook about 4 minutes, stirring occasionally until vegetables are softened.

    Add tomato paste; cook and stir 2 minutes.

    Add beans, broth, herbs and seasonings; bring to boil.

    Reduce heat to low, simmer, uncovered, 30 minutes until somewhat thickened.

    Remove bay leaf before serving.

    Makes about 4 cups.
