Ingredients
- 1 white onion, diced
- 3 eggplants, cubed
- 4 carrots, diced
- 1 lb. broccoli flowerets
- 2 c. cauliflower
- 3 c. mushrooms
- 2 Tbsp. chili powder
- 2 Tbsp. cumin
- 1/2 tsp. black pepper
- 1 Tbsp. fennel seed
- 1/2 c. garlic, minced
- 1 can diced tomatoes in juice
- 1/2 tsp. red chilis
- 1/2 c. olive oil
- 1/2 gal. water
Directions

1Saute onions, garlic, mushrooms and carrots in olive oil.

2Add the tomato, water and spices; bring to a boil.

3Reduce heat to a simmer and add the rest of the ingredients.

4Simmer for about 20 to 30 minutes.
