Vegetarian Fried Spring Rolls

Ingredients

  • 2 Green peppers
  • 1 Carrot
  • 1 pack Cellophane noodles (harusame)
  • 5 Shiitake mushrooms
  • 1 Salt (to taste)
  • 1 Soy sauce (to taste)
  • 1 Sesame oil (to taste)
  • 8 sheets Spring roll wrappers
  • 1 equal parts flour and water (as needed)

Directions

    Cut the green peppers, carrots and mushrooms into thin strips.

    Rehydrate the harusame and chop into bite-sized pieces.

    Heat sesame oil in a frying pan and fry the green peppers, carrots and mushrooms.

    When they are slightly cooked, add the cellophane (harusame) and stir fry.

    Add salt and soy sauce while stirring.

    On a spring roll wrapper, evenly place the filling from step 2 and spread flour dissolved in equal amount of water along the edge of the wrapper and roll it up.

    Place the spring rolls on a frying pan with oil, and fry until they are browned on both sides.
