Ingredients
- 10 lasagna noodles
- 2 (10 oz. each) pkg. frozen chopped spinach
- 1/2 c. chopped onion
- 1 Tbsp. oil
- 1 c. + grated raw carrot
- 2 c. + sliced fresh mushrooms
- 1 (15 oz.) can tomato sauce
- 1 (6 oz.) can tomato paste
- 1 1/2 tsp. oregano
- 2 c. cottage cheese
- 1 lb. shredded Monterey Jack cheese
- 1/4 c. grated Parmesan cheese
Directions

1Cook noodles 8 to 10 minutes.

2Drain.

3Prepare spinach. Drain.

4Saute onion in oil.

5Add carrots and mushrooms and cook until crisp-tender.

6Stir in tomato sauce, paste and oregano. Grease 9 x 13-inch pan.

7Layer noodles, cottage cheese, spinach sauce and 1/3 cheese.

8Repeat.

9Sprinkle with Parmesan cheese. Bake at 375° for 30 minutes.

10(I use extra carrots and mushrooms and only have 2 layers.)
