Vegetarian Lasagna

Ingredients

  • 10 lasagna noodles
  • 2 (10 oz. each) pkg. frozen chopped spinach
  • 1/2 c. chopped onion
  • 1 Tbsp. oil
  • 1 c. + grated raw carrot
  • 2 c. + sliced fresh mushrooms
  • 1 (15 oz.) can tomato sauce
  • 1 (6 oz.) can tomato paste
  • 1 1/2 tsp. oregano
  • 2 c. cottage cheese
  • 1 lb. shredded Monterey Jack cheese
  • 1/4 c. grated Parmesan cheese

    Cook noodles 8 to 10 minutes.

    Drain.

    Prepare spinach. Drain.

    Saute onion in oil.

    Add carrots and mushrooms and cook until crisp-tender.

    Stir in tomato sauce, paste and oregano. Grease 9 x 13-inch pan.

    Layer noodles, cottage cheese, spinach sauce and 1/3 cheese.

    Repeat.

    Sprinkle with Parmesan cheese. Bake at 375° for 30 minutes.

    (I use extra carrots and mushrooms and only have 2 layers.)
