  • 2 Tbsp. vegetable oil
  • 1/2 c. sliced carrots
  • 1/2 c. diced green pepper
  • 1 small onion, diced
  • 1/2 c. rice (uncooked)
  • 1 1/2 c. water
  • 2 Tbsp. McKay's chicken seasoning
  • 1 (29 oz.) can pinto beans
  • garlic to taste
  • 1/4 tsp. thyme
  • 1/4 tsp. cayenne pepper

Directions

    Mix chicken seasoning with water.

    Mix all ingredients together in a two-quart casserole dish.
