- 1/2 c. sliced carrots
- 1/2 c. diced green pepper
- 1 small onion, diced
- 1/2 c. rice (uncooked)
- 1 1/2 c. water
- 2 Tbsp. McKay's chicken seasoning
- 1 (29 oz.) can pinto beans
- garlic to taste
- 1/4 tsp. thyme
- 1/4 tsp. cayenne pepper
Directions

1Mix chicken seasoning with water.

2Mix all ingredients together in a two-quart casserole dish.

3Bake for 45 minutes, covered, at 350°.
